கடுகு ரகசியமும்... ஏவுகணையும்...!

நாம் பயன்படுத்தும் கடுகுக்குள் சற்று ஈரப்பதம் இருக்கும். எண்ணெயில் கடுகை இட்டுத் தாளிக்கும்போது, கடுகு சூடேறி அதற்குள் இருக்கும் நீர் ஆவியாகும். கடுகின் தோலைப் பிய்த்துக்கொண்டு நீராவி வெளியே வருவதால் கடுகு வெடிக்கிறது. நமக்குக் கேட்கும் ‘பட்... பட்...' என்கிற சத்தமும்கூட, ஆவியாகி வெளியே வரும் நீர், எண்ணெயில் படுவதால்தான் உருவாகிறது. சூடான எண்ணெயில் நீர்த்துளிகள் படும்போது சத்தம் வரும் அல்லவா, அதுபோலத்தான். 

ஆனால், எல்லாக் கடுகும் பாத்திரத்தைவிட்டு வெளிநடப்பு செய்வதில்லை. ஒன்றிரண்டு கடுகுகள் வெடித்தாலும், அவை பாதியாகப் பிய்ந்து போவதில்லை. உருண்டையாகத்தான் இருக்கின்றன. ஆக, கடுகுக்குள் இருந்த நீராவி வெளியே வரும்போது, கடுகை மொத்தமாகச் சிதைத்து விடுவதில்லை. ஒரு சிறு துவாரத்தை இட்டுக்கொண்டு நீராவி வெளியேறுகிறது. எனவே, எந்தக் கடுகு எவ்வளவு பெரிய துவாரம் இட்டிருக்கிறது என்பதைப் பொறுத்தே கடுகு வெளியேறித் தப்பிக்குமா, இல்லை நம் உணவுத் தட்டுக்கு வருமா? என்பது முடிவாகிறது.கடுகில் ஏற்படும் துவாரம் சற்றுப் பெரிதாக இருந்தால், விரைவில் நீராவி வெளியேறிவிடும், கடுகால் பறக்க முடியாது. 

ஆனால், நுண்ணிய துவாரமாக இருந்தால், நீராவி சிறிது சிறிதாக வெளியேறும். அப்படி வெளியேறும் நீராவியால் தனக்குக் கிடைக்கும் உந்துவிசை மூலம் முன்னேறி கடுகு மேலே பறக்கும். கடுகுக்குள் இருக்கும் நீராவி முழுவதும் வெளியேறிவிட்டால், கடுகுக்கு மேற்கொண்டு உந்துவிசை கிடைக்காது. அப்போது கடுகு கீழே விழுந்துவிடும். இவ்வளவு சாகசம் செய்யும் ஒரு கடுகின் எடை மிக மிக குறைவானதுதான். 

சின்னச்சிறு கடுகுக்கும், வானைத் தொடும் ஏவுகணைக்கும் ஒரு தொடர்பு உண்டு. ஓர் ஏவுகணை மேலே செல்ல வேண்டுமென்றால், எரிபொருள் தேவை. ஏவுகணை ஏவப்படும்போது எரிபொருள் எரிக்கப்படும். அப்போது வெளியாகும் வாயுக்களால் அழுத்தம் உண்டாகி, அதன்மூலம் கிடைக்கும் உந்துவிசையைப் பயன்படுத்தி ஏவுகணை முன்னேறிப் போகிறது. ஆக, சூடான எண்ணெயில் பட்டதும் வெடித்துப் பறக்கும் கடுகும், ஏவுகணையும் ஒரே வகையைச் சேர்ந்தவைதாம். இதுதான் கடுகுக்குள் உள்ளே இருக்கும் ரகசியம். இன்னும் சொல்வதென்றால் குட்டிக் குட்டி உருண்டை வடிவ ஏவுகணைகளைத்தான் நாம் சாப்பிட்டுக் கொண்டிருக்கிறோம், என்று கடுகை நினைத்து பெருமிதமும் கொள்ளலாம்.

The mustard we use has some moisture in it. When mustard seeds are fried in oil, the mustard seeds heat up and the water inside evaporates. Mustard crackles as the steam escapes by squeezing the skin of the mustard. Even the sound we hear 'butt...butt...' is caused by the evaporation of the water that falls into the oil. Doesn't it make a sound when water droplets fall on hot oil?

But not all the bitter go out of character. Even if a couple of mustard seeds burst, they are not half-baked. They are round. So, when the steam inside the mustard comes out, it doesn't completely spoil the mustard. Steam escapes through a small hole. So, depending on how big a hole the mustard leaves, will the mustard escape or end up on our dinner plate? The conclusion is that if the hole in the mustard is too big, the steam will escape quickly and the mustard cannot fly.

But, if it is porous, the steam will escape little by little. The mustard will fly upwards with the momentum it gets from the escaping steam. Once all the steam in the mustard is exhausted, the mustard will not get any further impetus. Then the mustard will fall down. The weight of a mustard that does so much adventure is very, very little.

There is a connection between the tiny mustard seed and the rocket that touches the sky. For a missile to go up, it needs fuel. Fuel is burned when the missile is launched. The released gases create pressure and use the thrust available to propel the missile forward. So, the mustard which explodes when it hits the hot oil and the missile belong to the same category. This is the secret inside the mustard. In other words, we can be proud to think that we are eating small spherical missiles.
